Tofu Kare-Kare
Tofu Kare-Kare is a Filipino dish that features a rich, peanut butter-based sauce with vegetables and tofu. Here are the ingredients and step-by-step instructions for making Tofu Kare-Kare:
Ingredients:
- 1 block (14 oz) of firm tofu, sliced into cubes
- 1 cup of sliced eggplant
- 1 cup of sliced string beans
- 1/2 cup of sliced onions
- 4 cloves of garlic, minced
- 2 tbsp of vegetable oil
- 2 cups of water
- 1/2 cup of peanut butter
- 1/4 cup of annatto water (1 tbsp annatto seeds steeped in 1/4 cup of hot water)
- 2 tbsp of fish sauce (or substitute with soy sauce for a vegetarian version)
- Salt and pepper to taste
Instructions:
Heat the oil in a large pot over medium heat. Add the onions and garlic and sauté until softened and fragrant.
Add the sliced eggplant and string beans and sauté for another 2-3 minutes.
Pour in the water and bring to a boil. Lower the heat and let it simmer until the vegetables are tender.
Add the peanut butter and stir until it is fully incorporated into the sauce.
Add the tofu cubes and cook for 3-5 minutes.
Add the annatto water and fish sauce and stir well. If the sauce is too thick, add more water until it reaches your desired consistency.
Season with salt and pepper to taste.
Serve hot with steamed rice.
