Ingredients:
- 1 lb pork belly or ribs, cut into 2-inch pieces
- 1 onion, quartered
- 2 tomatoes, quartered

- 1 bunch of kangkong (water spinach), cut into 3-inch pieces
- 10 cups of water
- 2 tbsp tamarind soup mix (Sinigang mix)

Instructions:
- In a large pot, heat 2 tbsp of oil over medium heat. Add the onions and tomatoes and sauté until softened.
- Add the pork and sauté until browned on all sides.
- Pour in the water and bring to a boil. Lower the heat and let it simmer for 1 hour or until the pork is tender.
- Remove any foam or impurities that rise to the surface of the soup.
- Add the tamarind soup mix and fish sauce, and stir until fully dissolved.
- Add the daikon radish and eggplant and cook for 10-15 minutes or until the vegetables are tender.
- Add the kangkong and cook for an additional 2-3 minutes or until wilted.
- Season with salt and pepper to taste.
- Serve hot with steamed rice.
