Ingredients:

  • 1 lb pork belly or ribs, cut into 2-inch pieces
  • 1 onion, quartered
  • 2 tomatoes, quartered
  • 1 daikon radish, peeled and sliced
  • 1 eggplant, sliced
  • 1 bunch of kangkong (water spinach), cut into 3-inch pieces
  • 10 cups of water
  • 2 tbsp tamarind soup mix (Sinigang mix)
  • 2 tbsp fish sauce
  • Salt and pepper to taste


Instructions:


  1. In a large pot, heat 2 tbsp of oil over medium heat. Add the onions and tomatoes and sauté until softened.
  2. Add the pork and sauté until browned on all sides.
  3. Pour in the water and bring to a boil. Lower the heat and let it simmer for 1 hour or until the pork is tender.
  4. Remove any foam or impurities that rise to the surface of the soup.
  5. Add the tamarind soup mix and fish sauce, and stir until fully dissolved.
  6. Add the daikon radish and eggplant and cook for 10-15 minutes or until the vegetables are tender.
  7. Add the kangkong and cook for an additional 2-3 minutes or until wilted.
  8. Season with salt and pepper to taste.
  9. Serve hot with steamed rice.
